Preheat your oven to 175°C (or 160°C in convection mode) and make sure all ingredients are at room temperature. In a bowl, mix the mix, eggs and water at high speed for 7 to 8 minutes, then reduce speed and mix for a further 2 to 3 minutes. Pour the batter into a buttered cake tin, filling it halfway to two-thirds full. Place the cake in the oven and avoid opening the oven during baking. The cake is ready when its texture is elastic to the touch. Turn out immediately after baking and leave to cool on a cake rack.
